Green tea comes from the same tea plant, Camellia Sinensis, as does all other tea. It is in the way it is processed that determines how it will come out. Green tea is not fermented. The leaves undergo three treatments: roasting, rolling and firing. They do have antioxidants in them as does all tea and all green tea has caffeine, unless they are decaffeinated. They also come in some deliciously infused flavours.
