Product Description
Pasteurised cow’s milk from the Cooleeney Farm herd made with a Vegetarian Rennet. This white mould rind has a soft yellow paste, with a narrow band all the way through. It is mild and creamy with hints of butter, undergrowth, and grassiness. It has a hint of chalkiness, when fully matured at 8-10 weeks the paste is smooth.
